Hayden and I have been gluten free for six weeks. People ask if I can tell a difference and I think I can. I’m not as lethargic as I was before. Let’s not mistake lethargy with being tired: I’m plenty tired…I have two kids under three. The days are long, but thankfully Harper sleeps through the night. I think cooking gluten free is much easier than it would have been even five years ago. I use blogs, Pinterest, and Google to help me out. The grocery store carries a variety of gluten free options so we don’t feel like we are missing out too much.

Friday night we made pizza using a gluten free pizza crust we can get at Wegmans. Although the crusts are small (it takes both crusts that come in the package to fill us up), we really can’t taste a difference. And Jacob LOVES to help make pizza!
